Late post from Wednesday, July 26th. This is one of those recipes that my family loves to devour! Consisting of the chicken thighs, makes a delicious dinner that is irresistible! This dinner consists of marinading the chicken in some soy sauce, honey, garlic (whole and minced), ginger and olive oil. I know you can always grill this, but it’s been too hot lately to cook outside. I baked these and they taste just as good.
Late post from last Monday. I always keep leftover kalua pig in the freezer. Makes it easier to make dinner on those busy weekdays. This particular time, I made the kalua pig crispy. Then I baked up some sweet potato fries. Topped the sweet potato fries with the crispy kalua pig, mixed stir fry vegetables, green onions and a dollop of sour cream. This was a good dinner for the family. Even though it may seem like an appetizer, it fed us all. What a delicious experiment!
Visited a local bar yesterday and saw this beautiful sunset. I couldn’t resist not snapping a photo of the sky. You can see the sun rays peeking through the clouds. Beauty in nature. I love it! Hope everyone has a great weekend!
There is always a first time for everything, right? Well, today we tried to slow cook this beef brisket in our regular grill. Added a metal box, with some apple and cherry wood chips. We smoked the brisket for about 10 hours on low heat, maybe 150° to 200° and voila ~ smoked beef brisket that was so flavorful and moist. What a great idea! I am so glad it worked out and that the family loved it too!
Such a beautiful 4th of July here in New Mexico! The sun is out and the sky is filled with those puffy white clouds. I am loving it! My photo has the sun rays peeking through the clouds.
